VINEYARDS AND TERROIR
The Grenache and Syrah are planted in clay-limestone plains and cultivated to achieve yields of around 50 hl/ha

PRODUCTION
The grapes are entirely de-stemmed and placed in temperature-controlled vats to macerate for around 15 days with only pumping-over operations, after a cold pre-fermentation maceration. The wine is aged in vats until it is bottled 1 year later.
TASTING NOTES
A lovely expression of blackcurrants and crushed raspberries on the nose, fresh and fruity on the palate.
SERVING AND FOOD PAIRINGS
16°C, slightly cooler than for the cru wines.
Enjoy with a variety of dishes and grilled meats.

The Grenache, Syrah and Cinsault vines are planted on dry, generally stony, terrain and produce a yield of 46 hl/ha.

PRODUCTION
The grapes are pressed immediately upon arrival in the winery, and a lightly tinted juice is then vinified like a white wine, at the same temperature (16-18°C). Malolactic fermentation is prevented in order to preserve the fresh, crisp character of this rosé. Ageing takes place in vat and the wine is bottled before spring.
TASTING NOTES
A lovely raspberry nose, fresh and delicious on the palate with red fruit and fruit drop aromas.
SERVING AND FOOD PAIRINGS
10-12°C, well chilled especially in summer. As an aperitif, or paired with salmon mousse, salade niçoise or tapas.
The Viognier thrives on the appellation’s narrow southeast- facing terraces, protected by low walls built from local stone. The soil is mainly granite.

PRODUCTION
The grapes are pressed and go into temperature-controlled stainless steel vats. Fermentation is carried out at a low temperature to preserve the fruit as much as possible. The wine then spends 10 months on its fine lees in used barrels.
TASTING NOTES
Refined and complex on the nose with accents of white flowers (acacia) and white-fleshed fruit complemented by a touch of honey. Broad and harmonious on the palate, showing minerality and finishing with notes of candied citrus.
SERVING AND FOOD PAIRINGS
Serve between 13-14°C, when young (2-4 years). Pair it with poultry in a creamy sauce, lobster or sea scallops.

Surface : Around 12 Ha on 45 Ha of « Vignobles Plaisance »
Soil : Clay mixed with fragmented limestone
Vines : 60% Merlot, 30% Cabernet Sauvignon & 10% Malbec.
Cultural Method : Driven in “reasoned culture”, cut simple and double guyot, with grass a row on two.
VINIFICATION
Maceration : Cold maceration before fermentation.
Fermentation : Fermentation in Thermo-regulated tanks, soft cuvaison during approximately 3 weeks.
Growing : In oak barrels, new 1/3, 1/3 of one year and the rest of 2 years.
